I often get compliments for my beautiful skin and slim body. I give the credit to my grandmother as I think I inherited it from her. As I child I used to ask her about her beauty secret and she used to laugh. As I grew up I realized that she does nothing special than eating a balanced diet and her favorite curd, which is must for lunch and dinner. My mother used to make curd everyday and used to force us…. Sometimes she used to make Dahi vada or chaat so that we can have curd……….
In African and Asian countries curd is believed as part of daily menu. Particularly rice eating countries like India and Chinese have lot of curd.Usage of curd as food and cooking food is very ancient and probably started since man started keeping animals and having milk. There are various ways to prepare curd. Sometimes it is made by adding fermented flour dough of wheatflour or sometimes covering it with rotten vegetables. In 1907 Louise pasture invented the way to make curd as we do it today. He observed the Bulgarian were very healthy. Their skin used to shine and they used to live long. He later found out that they have curd daily. He did some study and found the curd has lactic acid which helps in increasing the age of human beings.
Curd made at home is better. In India for example a spoonful of curd in mixed with lukewarm milk and then kept it under cover overnight.
Curd is a wholesome food and is rich in protein. It is easily digested than milk. Sometimes it is recommended to children who cannot have milk. Curd also has vitamin B, A and D. People who want to loose weight, should have curd. As it has lower calorie than milk. In a study in USA a group of heart patient were given curd twice daily for 2 months and and they saw immense decreae in cholesterol level. In another study in banagalore, India a group of obese people were advised to have normal diet but include curd daily for month and after that they lost 5-8 kg weight.
Somepeople do not like the smell of curd but then It can be mixed with a Varity of food preparations. It can be mixed with vegetables, you can maker raita, it can be used in making desserts, chaat and drinks like Lassi and shakes. Most of the time it is mixed with sugar and sometimes it is missed with salt and roasted cumin and chilli powder.
Today we get packaged flavored curd wherein fruit juices are added. Like mango curd, pinapple curd etc.
Never keep curd in deep refrigerator but keep in refrigerator. The more you keep it at Room temperature the fermentation is more.
